Modified Atmosphere Packaging (MAP) is a technique used for increasing the shelf-life period of fresh or minimally processed foods. This technique works by changing the air surrounding the food in the package to that of another composition. This means that the initial fresh state of the product may be prolonged. The shelf-life of perishable products like fish, meat, vegetables and fruit can be increased as the MAP technique slows the natural deterioration of the product. The mixture of the gases can be altered depending on the product, packaging materials and storage temperature.
